Lunch

I'm not exactly sure what this is. Tomato tartare? A version of caprese salad or a low-carb BLT? Whatever you want to call it, it was pretty good and no cooking with the oven which is nice for a hot summer afternoon. 

There was a small basket in our little local market next to all the "grocery store" tomatoes. They looked like "real" homegrown tomatoes. We cut into one last night and it was SO GOOD!  Nothing like a fresh farm tomato that is allowed to ripen naturally on the vine. DELICIOUS!  So, I decided to use one for lunch today.


Fresh mozzarella on the bottom. Next a sprinkling of chopped bacon.  My "tomato tartare" with salt, pepper, red pepper and chives.  Then garnished with basil oil (made with fresh basil from the patio), a sweet reduced balsamic vinegar, more bacon, basil and a few more tomatoes.


Cool, light and summer flavors.  SO GOOD!
