Pumpkin Granola


 Pumpkin Granola.  Delicious.  It tastes like Fall in a bowl! Here's how I made it: 
In a large bowl, place
  • 4 cups old-fashioned oats
  • 1 3/4 cups slivered almonds
  • 1/2 cup sunflower seeds
  • 1 cup coconut, unsweetened
  • 2 handfuls pumpkin seeds
  • 1 cup dried cranberries
  • 1/2 Tlb cinnamon
  • 1/2 Tlb pumpkin pie spice
  • 1/2 tsp salt
In a saucepan, mix until melted and combined
  • 1/2 cup brown sugar
  • 1/2 cup pumpkin puree
  • 1/2 cup maple syrup
  • 1/4 cup apple butter
  • 1 tsp vanilla
Pour hot mixture over oat mixture and mix thoroughly.  Place on baking sheets lined with parchment paper so that the mixture forms single layers on the trays for 60 minutes at 225 degrees, turning every 20 minutes for a total of three times.

 
(Now to be honest, the next day I added a handful of sunflower seeds and a handful of coconut to each tray. I also added a dash more of  salt, cinnamon and pumpkin pie spice just to boost the flavor.)

Served with bananas and milk (or not) and you have one yummy breakfast dinner!
