Spin On Greek Salad

I was watching an old Iron Chef the other day. The challenge was cucumbers and Michael Symon made this amazing looking greek salad with "cucumber faux pasta". So, I had to try it! I made a vinaigrette with lemon zest & juice, olive oil, salt & pepper, fresh chives, parsley and oregano. I mixed it with an English cucumber "pasta" and added kalamata olives, cherry tomatoes and feta. YUMMY!

Then I heated some naan bread on a cookie sheet with many of the same ingredients: lemon zest, salt & pepper, olive oil and the fresh herbs.
It was so good and light and fresh. It would be a GREAT starter to a lamb chop dinner! But we kept it simple tonight. DELICIOUS!
