Summer Baja Shrimp Tacos on a New England February Night


When it looks like this outside, you'd think a warm stew, heavy pasta or a slow braised comforting dish would be just the thing for dinner.  It often it is. But after a while, you are sick of being cold. Sick of those heavy winter dishes. Sick of the snow, the wet, the cold, the biting air.


Thursday night I decided to forget it's winter and think SUMMER!

Think warm.

Think fresh.

Think day trip to the coast.

I remembered these I made last year and decided to make something similar for dinner. I made crispy shrimp tacos with a cabbage slaw and that avocado tomatillo sauce I was craving.  SO GOOD!!

The green sauce is easy. Just blend:

  • roasted tomatillos
  • roasted onion
  • roasted jalapeno
  • cilantro
  • garlic
  • avocado
  • lime juice
  • salt & pepper


The slaw had:

  • fresh lime juice & zest
  • orange juice
  • garlic powder
  • salt & pepper
  • sugar
  • red cabbage
  • red bell pepper
  • cilantro 


Nice to have a few minutes and flavors of summer. Now back to reality. More snow on the way the next few days!
