Looks Like A Fiesta's Coming!

It's actually snowing outside today......early April's Fool? NO! It's SNOWING!! So instead of thinking of about that....we're thinking about the fiesta ahead. Went shopping tonight for salsa ingredients. Red and green are in the fridge now. Nancy and George and Dan and Linda are coming over for a celebration dinner.....Nancy's birthday! Okay, plan a meal for this crowd:

• One - Gluten free & dairy free 
• Two - vegetarians 
• One - no mushrooms 
• One - Southern meat-eatin' stick to your ribs kinda guy 
• And everyone wants yummy & healthy

Not an easy crowd to plan for. So we are going with the tried and true stand-by: mexican. I'm pretty sure that Dan and Linda have had this already, but it's a taco bar, pinto beans (our grocery store doesn't carry dried black beans, can you image?), cilantro lime rice and the usual salsas and chips and guacamole. Hopefully it will satisfy all.
 

The guy at the grocery store commented "That's a lot of cilantro." I didn't get enough! I used all that in the salsa tonight and will have to more tomorrow for the pico, guac and rice! I thought it would be funny to go back and buy the last two remaining containers they had. But that wouldn't be nice, would it? I better leave that for the next person. Plus IT'S SNOWING OUTSIDE!
