Dinner Tonight: Shredded Beef Taco Stacks

Cilantro lime rice, black beans, shredded beef, fresh pico and cheese. Garnish with cilantro, lime and avocado.  YUMMY!

Oh so good! It's just a basic  beef taco dinner, but doesn't  it look so much better as a tower of Mexican goodness? I had two happy guys tonight.  Mexican night always goes over big in this house!
