Green Pasta With Shrimp
Tonight for dinner we had "leftover surprise" or I liked to called it, green pasta. I had a little left over asparagus, some spinach, basil. We always have pasta in the pantry. So, I threw the asparagus, spinach and a grated zucchini in a pan with a little seafood stock and olive oil. I sauteed everything while the noodles were boiling. I added garlic, salt and pepper to the veggies and a handful of Parmesan. I chopped the basil and added it to the pan. I seared the shrimp for a minute or two, tossed everything together, and topped with more fresh basil and red pepper flakes. Delicious. Fast and easy. And we used up a lot of leftovers!
