2-Ingredient Pumpkin Spice Cookies
I have been seeing this recipe all over Pinterest. It's pretty simple:
- 1 can of pumpkin puree (not pumpkin pie filling)
- 1 box of spice cake mix.
That's it!
Really? I had to try it. No eggs, no butter, no oil. Good for you pumpkin - short of a little sugar and flour - it's basically a healthy cookie. Right? And it sounded fool proof: Dump pumpkin in mix. Stir. Bake at 350 until done. (10-15 minutes depending on size.)
(To be completely honest, I put an extra dash of cinamon and splash of vanilla in mine. I think they might benefit from some walnuts - the crunch would be really good!)
Were they the best cookies I've ever had? No. They were a little cakey - like a cake brownie texture. A little doughy. They didn't have icing. A dollop of good butter cream or cream cheese icing on top would be great! (But that kind of defeats the whole lower fat idea.)
They were, however:
- Very inexpensive
- Fast and easy to make
- Lower in fat - no eggs - so lower calorie by it's very nature
- Made from two easy-to-store cupboard ingredients
If you had somewhere to go and needed a fast, easy dessert with no hassle, this would be good. This is a great idea for a party or cookie exchange, potluck etc. because they are so inexpensive. With the pumpkin and the spices, they just taste like Fall - Thanksgiving - The Holidays. While they may not become your favorite cookie of all time - or even top 20 - they are definitely worth a try. Especially this time if year.
