Salmon Salad
Serves about 4
In a large bowl combine:
- 1/4 sweet onion, chopped
- 1/2 red pepper, chopped
- 2 stalks celery, chopped
- 1 small green apple, chopped
- Salmon (Fresh, packaged, canned and smoked works. I used one package of salmon found with the packages of tuna and one package of smoked salmon in the meat section.)
In another bowl combine the dressing:
- 1/2 - 1 cup greek yogurt (depending on the amount of dressing you like on your salmon)
- 1/4 cup dijon
- Zest and juice of 1/2 a lemon
- 2 Tlb or so of fresh dill
- 2 Tlb or so of fresh thyme
- 2 Tlb or so of flat leave parsley
- 1 Tlb old bay seasoning
- Salt and pepper to taste
Add dressing to the salmon mixture and serve over sliced tomatoes or chopped lettuce. I think it's better the next day after it's marinated in the fridge overnight. Delicious!
