"Just About Anything You Want" Salad

 
This is the easiest salad because you can add just about anything and it will be good. All you need is a choice of:
  • greens
  • fruit
  • cheese
  • balsamic
  • nuts
  • salt and pepper to taste
It's that easy!  For this particular salad I used:
  • 1/2 a bag of spinach mix
  • one red pear & one generous handful of blueberries
  • parmesan
  • a good balsamic vinegar from the oil and vinegar store
  • one generous handful of candied pecans
  • salt and pepper, to taste
 
I made a similar, yet completely different, salad like this the night before.  I just forgot to get a photo. I used:
  • the other 1/2 of the bag of spinach mix
  • a supremed tangerine and a red pullemo
  • feta crumbles
  • the same balsamic vinegar
  • smoked almonds
  • salt and pepper to taste
Goat or blue cheese would be delicious ... pine nuts or walnuts or slivered almonds ... apple or strawberries.  Anything you like or just have around the house works. It's more of a formula.  It's more about hitting that balance of sweet, salty, crunchy, smooth, tangy while working around some  healthy foods like spinach, pomegranates, blueberries, citrus, almonds, sunflower seeds, etc. 
 
If you use a stronger cheese, you can use less and have the same effect.  Lightly salted or unsalted nuts are great choices if you are watching salt.  Load up on the greens and the fruit. 
 
I served this one tonight with a piece of mahi mahi steamed in parchment paper. The citrus salad the other night was served with chicken.  It's so versatile and easy.  I highly recommend giving it your  own personal twist.
