Tomato Peach Salad
So yummy. So simple. So pretty. So summer. This salad is a must try!
First, rub a bowl with a clove of garlic just to get a touch of garlic flavor. Any more would be too much. Slice ripe peaches and tomatoes (multi-colored heirlooms would be really dramatic on the plate and delicious too) and toss them in a bowl with a dash of white balsamic vinegar, good olive oil, salt and pepper. Plate the fruit and add feta and basil on top. Finish with a little more fresh cracked pepper. (If you had a pink or white pepper, that might be better for presentation, but I only had black.)
I can think of so many combinations of this, I will be making different ones all summer. Add lemon juice and zest instead of balsamic. Drizzle finished salad with balsamic reduction. Use mint and parsley instead of basil. Nectarines instead of peaches. Goat cheese or queso fresco .... there are so many options that whatever you have on hand would be great!
