Watermelon Feta Salad

 

Tonight David and Evan had  leftover pizza in the fridge, so I got to make any sort of dinner I wanted.  Not often do I get this chance - so I had to make the most of the opportunity.  I made a "watermelon feta salad" of sorts. 

 

I sliced the watermelon and sprinkled it with salt, pepper and a dash of olive oil.  I topped the watermelon with a chopped mixture of:

• shallot
• bacon
• fresh chives
• fresh mint
• fresh basil
• feta
• salt and pepper

Then I chopped it like a pizza and dug in!
