Easy, Quick Lunch
This is one of my favorites. I put 1/2 a butternut squash, a sweet potato and 1/2 an onion in a microwave safe bowl with some chicken stock. Microwave until soft. Then blend and add to a pot and heat over the stove. I add salt, pepper, a little garlic and a dash of apple cider vinegar. Simmer a few minutes and serve.
I garnished with bacon, croutons and a drizzle of honey. (Olive oil or maple syrup would be good too.) It's quick and easy. And you can use just about anything. Roasted carrots would be good garnished with some fried sage leaves. YUM!
