Baked Cod With A Kale Salad

I ran across this blog and this recipe sounded really good: Chopped Thai Salad with Sesame Garlic Dressing. I tweeked it to fit what I had.

Green onion, carrot, kale, yellow & orange bell pepper, edamame,  cilantro, toasted walnuts.



I only used about 1/4 the dressing. It really makes a lot.  After tasting it, I added salt and pepper and added a little more vinegar and honey. I used just one big clove of garlic instead of three. I used 1/2 olive oil and 1/2 canola. I didn't have lemongrass so I used a lot of fresh grated ginger. But basically the same concept. 


Then topped the salad with a piece of baked cod.  Delicious!
