A Tale of Two Lobster Rolls

It is a gorgeous August day here in Connecticut.  The kind of day we dream about all winter.  But today, after church, my sweet husband will not be on a beach, a boat, a lake, a vineyard or a patio.  He will be cleaning out and trying to fix the basement bathroom pump. The $52 part came in and we are hoping this will be just the thing to fix it.  Fast, easy and inexpensive.

So before he started out on his afternoon work, I made him a couple of lobster rolls for lunch. One hot with Old Bay butter and one cold with a tarragon mayo, shallot, celery and arugula. Both in a mini hollowed out pretzel roll.

As it turned out, he only ate the hot one and didn't like the cold one. So much for trying to be creative. Next time I will only do the hot buttered version. But I have come to appreciate both the hot and cold variety. I prefer the hot roll, but occasionally, especially on a really hot day, I like the cool crunch of the celery and the ever slight bit of mayo on the roll.  It's definitely lobster roll tine of year.

I'll keep you posted on the basement.

(NOTE: DAVID FIXED IT!!!  YEAH!!! For a $52 part and a lot of patience and cleaning, David got everything up and running. $1,800? No way!  I was so excited and proud of him for getting it up and running. Whoo Hoo!)
