Ever Heard Of Pig Cake?
I needed a dessert to take on Sunday morning for about 20-40 people. I needed something easy that I could make ahead. I saw this recipe for something called pig cake on The Pioneer Woman's blog. 1.) It started with a box cake mix and I find that to be VERY helpful when I am attempting to bake. Less room for error. And 2.) It said refrigerate several hours, so I knew I could make it the night before and leave it in the fridge until time to go.
If you like those ambrosia, jello-type, cool whip salads, you will LOVE this cake. It's basically an orange cupcake with pineapple salad piled on it. I thought they were pretty good and GREAT for a potluck item. Hard to go wrong with a Pioneer Woman recipe.
I decided to change it up a bit and make cupcakes. I garnished them with a mandarin orange slice as the recipe called for, but I wanted people to know it had pineapple in it in case they were allergic or didn't like it. So, I also put a small piece of dried pineapple candy on top as well.
