Salmon Salad

 
Serves about 4

In a large bowl combine:
  • 1/4 sweet onion, chopped
  • 1/2 red pepper, chopped
  • 2 stalks celery, chopped
  • 1 small green apple, chopped
  • Salmon (Fresh, packaged, canned and smoked works. I used one package of salmon found with the packages of tuna and one package of smoked salmon in the meat section.)
     
    In another bowl combine the dressing:
  • 1/2 - 1 cup greek yogurt (depending on the amount of dressing you like on your salmon)
  • 1/4 cup dijon 
  • Zest and juice of 1/2 a lemon
  • 2 Tlb or so of fresh dill
  • 2 Tlb or so of fresh thyme
  • 2 Tlb or so of flat leave parsley
  • 1 Tlb old bay seasoning
  • Salt and pepper to taste
Add dressing to the salmon mixture and serve over sliced tomatoes or chopped lettuce. I think it's better the next day after it's marinated in the fridge overnight. Delicious!
